Kale, apple & caramelised nut salad

A zingy salad which is loaded with the nutritious benefits of kale and protein from mixed nuts. A great flavour burst with the bite of lemon juice offset with the sweetness of the caramelised nuts.


  • 3 handfuls Kale which has been washed & trimmed
  • Juice ½ Lemon juice
  • 1 tbsp Olive oil
  • ½ tsp sea salt
  • 100g nut medley
  • 1 tbsp maple syrup
  • 1 tsp coconut oil
  • 1 apple slicedDressing
  • 2 tbsp olive oil
  • 4 tbsp organic cider vinegar
  • 1 tbsp Wholegrain mustard
  • 1 tbsp sweetener – honey, maple syrup, agave
  • Sea salt
  • Black pepper


Preheat oven to Gas mark 6/200 °C

  1. Whisk together the lemon juice, olive oil and salt in a large bowl. Add the kale, toss to coat and let stand 10 minutes.
  2. Caramelise the nuts by adding the coconut oil & maple syrup to a small pan and heating on a low heat until everything combines.
  3. Add in the nuts and toss thoroughly so that they are well coated. Set aside.To make the dressing
  4. Add all the ingredients to a mason jar, replace the lid and share to combine.
  5. Finally compile the salad by adding the kale into a large bowl, add some design and toss to combine.
  6. Divide onto plates then top with the apple and caramelised nuts.
