Healthy Bundt Cake

Easy, healthy Bundt cake made with oats, honey, nuts, apples, dried berries and drizzled with dark chocolate.

Ingredients

DRY INGREDIENTS

  • 3 cups oats (use gluten free if you need gluten-free option)
  • 1 tsp baking powder
  • 1/3 cup crushed Nutty Mix Nuts Snacking Essentials
  • 1/3 cup Berry Mix from Snacking Essentials
  • 1 tsp cinnamon
  • Pinch of salt

WET INGREDIENTS

  • 3 eggs (use flaxseed eggs for vegan option)
  • 3 tbsp date nectar (or honey, maple or rice syrup)
  • 2 small apples, peeled, cored and then pureed with touch of water in a blender (you can also use ¾ cup of shop bought apple puree)
  • 3 tbsp coconut oil, melted
  • 1 cup white yoghurt

TOPPINGS

Melted dark chocolate, crushed nuts

Method

  1.  Preheat oven to 180 degrees and grease your Bundt cake baking dish with a touch of coconut oil
  2. Now in a medium size bowl mix together all the dry ingredients and set aside
  3. In a smaller bowl mix all the wet ingredients
  4. Pour the wet ingredients into the bowl of oats and stir well to combine
  5. Tip the mixture into the prepared baking dish and place in the oven and bake for around 50 – 55 minutes or untilthe cake is golden;
  6. Let cool for 10 minutes before taking it out of the baking tin
  7. Drizzle with melted dark chocolate and sprinkle generously with Nutty Mix Snacking Essentials nuts
