Yummy Roasted Almond Bars and there's no baking required.
Start by soaking the dates in boiling water for 5 minutes.
Preheat oven to around 180 degrees and roast the almonds for around 8 minutes or until slightly dark in colour. Save the ¼ cup for toppings (chopped them up roughly)
In a food processor pulse the walnuts, roasted almonds, and oats until crumb like texture.
Next drain the dates and add them to the mix together with pinch of salt and vanilla extract
Process until you get a sticky mixture.
Get a square baking dish, put the mixture in, press down and spread evenly. Pop into the fridge to set while you make the chocolate topping
Place the almond butter and coconut oil into a small saucepan and heat on low for a minute or so.
Next add in the chocolate and stir constantly until the chocolate has melted completely
Pour over the mixture, sprinkle with chopped almonds gently pushing them into the chocolate.
Pop it back in the fridge for an hour or so. Take out and slice into bars; devour
