Nutty Energy Balls

these bitesize snacks are perfect for giving you a boost when you need it. Bring some with you when you’r out and about, on long walks or at work.

Simple to prepare, they don’t need cooking, you can mix and match different ingredients to your taste

Ingredients

  • 75g Snacking Essentials Nut Medley
  • 130g medjool dates
  • 90g Almonds
  • 1 tbsp cacao powder
  • 1 tbsp chia
  • Drop of almond essence
  • 1 tbsp maple syrup or coconut syrup
  • pinch cinnamon
  • pinch salt

Method

  1. Put all the ingredients in a blender and blitz until all the nuts are smashed and the mix forms a rough dough.
  2. You need to test at this stage and see if the mix is wet enough to stick together. So squidge the dough in your fingers and if it sticks together it’s good to go and you can press the mix into balls
    • (if the mix is too dry add a little more maple syrup or a few more dates and blitz again)…
  3. Finally roll the balls in the coatings..
